Let me be clear: Surviving Dinner is not about cuisine and, frankly, it’s not about getting perfectly balanced meals on the table. Most days I try to cook a decent meal, but when I’m making my menu plan for the week there are some nights that I know will be crazy. I don’t have a lot of time to spend prepping, cooking, and cleaning on those evenings. Often I can plan to serve something from my freezer, but other times the freezer is a little more lean. Surviving Dinner menu plans have minimal dirty dishes, pots & pans, and prep/cooking/clean-up time. Some require some planning or preparation the night before, but many don’t.
